I would probably wait to stir in the cilantro until just before serving - I think the flavor is stronger and fresher that way. I'd probably also add a serrano chili to the chili mix - roughly chopped and a clove of garlic. Their price per pound is usually the same as other stores - which is why I never went in. I'll have to see if their cuts are different and don't include the bone/fat.
